Weekly Reflections No. 1

Food & Nutrition

During the school week, I typically do not make involved breakfasts for myself and my family, but we had some red potatoes to use up, a half-used onion in the fridge, a lone poblano pepper that I inadvertently left out of one of our Blue Apron dinners, and I had a flash of desire to make a nicer breakfast. So to Google I went for a “Healthy Egg Casserole” and found this lovely recipe from iFoodreal. I made some tweaks based on what we had on hand, but this was extremely easy to prep (I did it right after dinner) and then pop in the fridge to bake the next morning. As the recipe notes, you can even make this casserole up to two days in advance. My baking time was a full hour rather than the recipe’s 40 minutes, I think due to my using a round ceramic baking dish rather than a 9 x 13 pan. This is a simple and versatile make-ahead recipe that I will definitely use again.

Tweaks: used one poblano in lieu of the red and green peppers; swapped white onion for red onion; used 3/4 cup 1% milk and 1/4 cup half & half; and used 3/4 cup shredded cheese for the top.

Inspiration & Motivation

We are complex beings leading complex lives. We know and live this reality extremely well, often anticipating challenge, expecting frustration, and preparing for the unknown. But even so, we often wait for conditions to be ideal or just right before we ‘get back on the wagon’ or start working towards a new goal. Some examples: “I’ll start eating better after the holidays” or “I’ll get back to my exercise routine when my loved one is feeling better” or “I’ll start going to bed earlier once that big project at work is finished”.

Life, as beautifully rich as it is, does not present us with precise, ideal circumstances in which working towards our goals is easy and convenient. In fact, it usually seems like the opposite happens. There will almost always be something that comes up, whether that’s a stressful event, challenging circumstance, or some situation that veers us off course of our progress.

Cultivating our health and taking care of our bodies has to be done within these less than ideal circumstances. With the right approach and the right expectations, this is absolutely achievable. And with the right frame of mind, you can create the conditions that ultimately ensure your long-term success. There is a lot more to come on this key, foundational concept.
